Ingredients:
300 g shrimp, peeled
2 diced avocados
1 large cucumber, diced
1 red bell pepper, cut into half rings
1/2 red onion, sliced into thin semi-rings
fresh cilantro for garnish
For the dressing:
3 tbsp. olive oil
juice of 1 lime
1 tsp. honey
salt and pepper to taste
Preparation:
Fry the shrimp in a pan with a little olive oil until browned, about 2-3 minutes on each side. Cool.
In a large bowl, combine avocado, cucumber, red pepper and onion.
For the dressing, mix together the olive oil, lime juice, honey, salt and pepper.
Add the sauteed shrimp to the salad and top with the dressing.
Stir gently so as not to damage the avocado.
Garnish with fresh cilantro before serving.
