Pork in sweet and sour sauce

Here's a recipe for Pork in Sweet and Sour Sauce:

Ingredients:

For the Pork:

  • 500g (1 lb) pork loin or pork shoulder, cut into bite-sized pieces
  • 1 egg
  • 2 tbsp soy sauce
  • 3 tbsp cornstarch
  • Oil for frying

For the Sweet and Sour Sauce:

  • 1/2 cup pineapple juice (from a can of pineapple chunks)
  • 1/4 cup rice vinegar or white vinegar
  • 1/4 cup ketchup
  • 1/4 cup sugar
  • 1 tbsp soy sauce
  • 1 tbsp cornstarch mixed with 2 tbsp water (slurry)

Vegetables and Extras:

  • 1 onion, cut into chunks
  • 1 red bell pepper, cut into chunks
  • 1 green bell pepper, cut into chunks
  • 1 carrot, sliced
  • 1 cup pineapple chunks (canned or fresh)
  • 1/2 tsp salt (optional)
  • Cooked rice, for serving

Instructions:

1. Marinate the Pork:

  • In a bowl, mix the pork pieces with the egg, soy sauce, and cornstarch. Make sure the pork is evenly coated.
  • Let it marinate for at least 15-20 minutes.

2. Fry the Pork:

  • Heat oil in a deep pan or wok over medium heat.
  • Fry the marinated pork pieces until golden and crispy, about 4-5 minutes. Do this in batches if necessary.
  • Drain the fried pork on paper towels and set aside.

3. Prepare the Sweet and Sour Sauce:

  • In a small bowl, mix the pineapple juice, rice vinegar, ketchup, sugar, and soy sauce.
  • Heat a large pan or wok over medium heat and add the sauce mixture. Bring it to a simmer.
  • Stir in the cornstarch slurry and cook until the sauce thickens, about 2-3 minutes.

4. Cook the Vegetables:

  • In a separate pan, stir-fry the onion, bell peppers, and carrot until they are tender-crisp, about 3-4 minutes.
  • Add the pineapple chunks and cook for another minute.

5. Combine Everything:

  • Add the fried pork to the pan with the vegetables and pour the sweet and sour sauce over the top.
  • Toss everything together until the pork and vegetables are evenly coated with the sauce.

6. Serve:

  • Serve hot over cooked rice.
